1 (16 oz) package cheese tortellini (thaw if frozen)
1 tbsp olive oil
4 skinless chicken breast halves, cubed
3 tbsp butter
1/2 – 1 cloves of garlic, minced (add more or less for taste)
2 cups heavy whipping cream
1/3 cup grated parmesan cheese
3 tbsp chopped parsley
1 tsp salt
Bring a large pot of lightly salted water to a boil and add tortellini. Cook, stirring occasionally, until tortellini float to the top and the center is hot. Drain tortellini. Heat butter in a large skillet over medium heat; cook chicken breast until no longer pink in the center, about 10 minutes. Remove chicken from heat. Melt olive oil in another skillet over medium heat; saute minced garlic until lightly browned. Stir heavy cream into garlic and bring to a boil. Reduce heat to medium-low and simmer until slightly thickened, about 3 minutes. Add parmesan cheese, parsley, and salt. Continue to cook until cheese is melted or about 1 minute. Stir tortellini and chicken into cream sauce. Simmer until heated throughout.
